Coconut Cookies
Coconut cookies - by popular demand. 🥥
These are relatively easy and absolutely delicious for any occasion.
I’m not the biggest fan of coconut desserts but these “take the cake.”
You will need...
Ingredients:
I cup dehydrated coconut
1 cup coconut flour
2,5 tbsp oat flour
2 tbsp tapioca flour
1/4 tsp baking powder
1/4 tsp baking soda
1/2 tsp xanthan gum
1/2 tsp salt
1 cup coconut sugar
1/4 cup extra virgin olive oil
2 flax eggs
1/2 cup melted coconut oil
Instructions:
Preheat the oven to 180C (350F) and prepare a tray with baking paper.
Sift together the dry ingredients in one bowl. In another bowl add the flax egg ingredients (water and ground flax seeds - for 1 flax egg you need 1 tbsp ground flax and 2.5 tbsp water). Let sit for 5 mins.
Add the other wet ingredients into the flax mixture and then pour into the dry ingredients and mix until it becomes a homogeneous batter.
Roll out the dough and form into desired cookie shapes.
Bake for 10-11 minutes until golden and let sit until cooled completely.
