Jackfruit Tacos

How to make jackfruit tacos?
Taco shells (homemade or store-bought)
Fixings: spiced corn, purple cabbage, vegan cheese sauce and anything else you might light.
For spicy pulled jackfruit you will need:
* 2 20-ounce cans of jackfruit in water
* 1 tbsp olive oil
* 1 onion, thinly sliced
* 3 garlic cloves, finely chopped
* 1 14.5-ounce can chopped tomatoes
* 1 tbsp tomato paste
* 1 tbsp chipotle paste
* 2 tsp cumin
* 2 teaspoons oregano
* Juice of 1 lime
* Sea salt, to taste
* Cayenne pepper, to taste
* Water (however much is needed)
Instructions:
Drain and rinse the jackfruit thoroughly. Using hands or forks, shred the jackfruit and set aside. Heat the oil in a large saucepan over medium heat. Add the onions and cook until translucent. Add garlic and continue to cook for around 1-2 minutes. Add the rest of the ingredients , including the water, except for the lime. Bring everything up to a boil then reduce to a simmer and cover, cook for about 20 mins. Remove the lid and continue to cook until the sauce has reduced and thickened, around 10 minutes. Remove from the heat and add the lime juice.
Serve the pulled jackfruit with warm tortillas and other toppings.
