Blondies
Had a TON of cannelini beans (white beans) and decided to make these blondies…. (If you don’t know why it’s called a “blondie,” it’s a blonde brownie. Like me 😉
These are vegan, gluten free and refined sugar free. And if you don’t tell anyone they’re made of beans, they’d never know.
For these blondies you will need:
3 cups white cannelloni beans
2/3 cup maple syrup or agave
1/2 cup peanut butter
1/2 cup almond butter or tahini
1/2 cup oat flour
1 tsp baking powder
1/2 cup vegan chocolate chips
Instructions:
Preheat oven to 180C/350F and prepare a baking pan.
Add the beans, maple syrup, and nut butters to a high speed blender and blend until smooth. Pour the mixture into a bowl and mix in the flour and baking powder. Stir well and then fold in the chocolate chips.
Spread the batter in the prepared pan and top with more chocolate chips.
Bake for about 35 minutes or until toothpick comes out clean.
Cool completely before slicing. Serve and enjoy!
