Hanukkah Latkes

It’s #hanukkah tonight. What does that mean? Presents and candles and latkes ❤️ This year it was especially important to me to perfect my latke recipe. One of my first memories as a child was during the holifaus (Hanukkah specifically) as a little girl. Each Hanukkah my grandmas (the last one of whom I lost about a month ago), would put on their aprons and have a “latke-off”... they would each take over a portion of the kitchen and prepare latkes according to tradition and their own specific recipes that they were taught growing up in their families. It was a special time. Obviously the latkes were delicious but the best part was simply the way we were all together. School was out. The house was filled with family, wrapped presents filled the dining room table next to the menorah, and there was an atmosphere of anticipation...of joy. You don’t forget feelings like that. Even in the dark moments. So today I prepared my own plant-based latkes- and just for a moment- I was brought back to that time- the innocence and the beauty of being a kid- surrounded by family- surrounded by love. And today, that moment will have to suffice. So here’s my latest recipe- a gluten-free #vegan take on the winning family recipe (and some of the best latkes you’ll ever eat.) I also made vegan sour cream (woah...I know!)... Mind you, I don’t have specific measurements for this one... but I’ll do my best to remember what I did. (So taste and check consistency as you go- and feel free to adjust as needed.)

Ingredients: 6 medium potatoes 🥔 1 medium onion 5 tbsp tapioca starch/flour 2 flax eggs (2 tbsp ground flax seed 5 tbsp water) 2 tbsp olive oil Black pepper Sea salt Avocado oil for frying Instructions: Peel and grate (with a cheese grater) the potatoes Dice onion Mix the water with the flax and let sit for 2/3 minutes Place the potatoes in a cheesecloth and wring, extracting as much moisture as possible. In a medium bowl mix together all ingredients (except for the avocado oil) In a large heavy-bottomed skillet over medium-high heat, heat the oil until hot. Place large spoonfuls of the potato mixture into the pan and cook until golden brown on each side. That’s it. 🥰
