Chickpea Crepes with massaged kale and sautéed mushrooms

An oldie but goodie. ✨💚✨

These chickpea “piadine” never get old.

Above is a rosemary chickpea crepe (farinata) with massaged kale and sauteed mushrooms....

Chickpea crepes (makes 4)

Ingredients:

1 1/3 cup chickpea flour

1 1/2 cups water

1/2 cup olive oil

1 tsp sea salt

3 sprigs fresh rosemary chopped

Crushed black pepper to taste

Instructions:

Combine all ingredients except for the rosemary in a bowl (whisk together or mix well with a fork) and stir until smooth. Once perfectly uniform, stir in the chopped rosemary.

Place a griddle or pan over medium heat and add about 1 tsp of olive oil.

Pour in 1/4 of the batter and cook on each side for about 3-4 minutes or until golden brown.

Fill with whatever you like! I used button mushrooms sautéed with garlic, olive oil and hot pepper flakes and massaged dinosaur kale!
