Galaxy Doughnuts
So there’s this thing happening called GALAXY DOUGHNUTS. 🌌 🍩
Seriously though- it’s “a thing.”
Everyone’s doin it.... and they’re sooooooo pretty.
I’ve been wanting to make an attempt at them for a while but knew it would be quite the endeavor considering the ingredients I use: as always, #morganickitchen completely refined sugar free gluten-free #dairyfree and egg free

yet, as I always say- anything is possible and therefore- I did it! I made galaxy doughnuts.
The baked chocolate doughnuts were simple. I made them with my daughter:
🍩 ingredients:
1 tbsp ground flax seeds mixed with 3 tbsp water
3/4 cup gluten free flour mix
1/4 cup raw cacao powder
1/2 tsp aluminum free baking powder
1/4 two baking soda
1/4 tsp Himalayan salt
A little less than 1/2 cup coconut sugar
1/4 cup coconut milk
1/4 cup rice milk
3 tbsp melted virgin coconut oil
Seeds scraped from 1 vanilla bean
Instructions:
Mix the dry ingredients and then mix the wet ingredients into the flax mixture. Pour the wet into dry.
Prepare a doughnut pan with coconut oil and pour the batter into the pan. Place in a preheated oven (375F/190C) and bake for 10 minutes. Let cool completely. 🍩🍩🍩
Now for the good part. For the frosting, I made homemade coconut butter by blending dehydrated coconut flakes in my @vitamix until it became a smooth creamy texture and then divide the butter into three bowls (about 1/3 cup each) and here’s the fun part- use all natural superfood dyes (I used @unicornsuperfoods “ocean blend” for the blue “antioxidant blend” for the red/pink and “berrylicious blend” for the purple.
Add as much or as little as you want until the coconut butter becomes the desired color and then watch a YouTube tutorial on how to mix the colors for dipping the doughnuts 🤗
