Stir Fried Bok Choy with Smokey Tofu

 


I know, Italian is pretty much the BEST cuisine in the world. And I love it. So so much. However.... once in a while I crave some different flavors.
Growing up in the states, we had access to pretty much all international cuisines and I was lucky enough to be introduced, at an early age, to food from all over the world.
As I slowly began cooking myself- And spent a lot of time traveling the world - I learned a good amount about different foods/flavors/techniques.
The other day, I spotted some luscious bok choy 🥬 out of the corner of my eye and knew EXACTLY what to do with it 😉
So without further ado, here’s one of my favorite tofu recipes EVA:

Stir fried Bok Choy with Smokey Tofu.

Ingredients:
1 package firm tofu, patted dry, cut into 1-inch cubes
2 bunches (about 4 cups bok choy)
2 Tbsp coconut oil
3 garlic cloves (crushed)
1 leek (or shallot)
Pinch Chili flakes
Salt to taste
Smokey tofu marinade/sauce :
1 Tbsp liquid smoke (I buy mine in the UK- if you don’t have access, you can always use smoked paprika or actually smoke the tofu (smoking chips, water basin, smoker... a lot of work but worth it for the flavor!)
1 Tbsp tamari
1 tsp rice miso paste
2 Tbsp rice wine (or dry white wine)
2 Tbsp water
1 tsp coconut sugar

Instructions:
Mix all the ingredients for the marinade in a bowl. Place the sliced tofu into the marinade and let soak for at least an hour, stirring so that all sides are covered.
Prep the leek, garlic and bok choy.
Once the tofu has soaked, heat oil in a wok or large skillet over medium to high and add the tofu, searing on all sides until slightly browned and crispy (about 5 mins).
Set the tofu aside and wipe pan. Heat another Tbsp of oil over medium eat and throw in the leek, crushed garlic, chili flakes and bok choy.
Stir continuously until bok choy begins to wilt, about 3-4 minutes. Add the remaining tofu marinade to the pan, simmering for a couple of minutes, or until bok choy is tender.
Toss the tofu back into the pan with the bok choy and sauce. Remove from heat, stir, adjust salt and serve immediately!
