Orange Cake
I have these friends in Umbria, and they send me the most incredible boxes of fresh, local, organic produce almost every week.
Which means: 1. I’m very lucky 2. I get to nourish myself and my daughter in the most wonderful way and 3. I have plenty of opportunity to test out new #plantbased recipes for you guys (and my friends who get to eat my experiments!)
With my gorgeous Umbrian #oranges , I decided to make a #glutenfreevegan orange #cake

Ingredients:
1/4 cup fresh squeezed orange juice 1/4 cup coconut oil coconut oil
2/3 cup unsweetened almond milk
2 Tbsp orange zest (make sure you use organic/unwaxed oranges
1/2 cup maple syrup or agave nectar
Seeds scraped from 1 vanilla bean
1 1/4 cup gluten free flour blend (I make my own... no gums!)
1 1/4 cup almond flour
2 tsp baking powder
1/4 tsp baking soda
Instructions:
•Preheat oven to 180C/350F
•Melt the coconut oil and then add the orange juice. Stir.
•Add the almond milk, orange zest, maple syrup and vanilla beans.
•Mix in the almond flour, sift in the gluten free flour mixture, baking powder and baking soda mix well until a homogeneous batter is formed
•Transfer mixture into a lined springform cake pan (mine was about 9 inches/22 cm
•Bake in preheated oven for 15 minutes or until completely dry
•Let cool completely and decorate
•I used vegan buttercream frosting (DM me for the recipe), orange rind, and dried calendula flower petals. 🌺
