Zucchini, Orange & Pea Soup

Zucchini pea and orange soup recipe:
1 celery stalk
1 medium carrot
1 yellow onion
2 cloves garlic
Extra virgin olive oil
Black pepper
Sea salt
5 zucchini
1 bag frozen peas (fresh would work too...try not to use canned!)
Juice from 1 orange
Rind of 1 orange

Instructions:
In a large pot, heat about 1 Tbsp olive oil and sautΓ© the chopped onion. When translucent, add the garlic, chopped carrot and chopped celery.
Once the β€œsoffritto” veggies are fragrant, add the zucchini (chopped) and stir for about two minutes.
Add in about two cups of water and the peas.
Cover and let simmer until all veggies are very soft. Cool slightly and blend. Add orange juice, salt and pepper.
Serve garnished with a swirl of olive oil and sprinkled orange rind.
