German GF Gnocchi with Artichokes
Inspired lunch. So yeah... I know it’s Monday and I should possibly be eating light and “detoxy” but I really felt like a plate of pasta. (And I have some local ARTICHOKES 🌝) soooooo.... I decided to make these gluten free vegan gnocchi (recipe inspired by @elavegan (details below) served with chopped artichokes sautéed in olive oil straight from @agriturismoilcapoverso and parsley. Today’s lunch word: insane. Lunch was insane. Obviously, I overate...but I’ll go light on dinner 😉
Ingredients: 1/2 kilo potatoes 1 cup chickpea flour 1/2 cup tapioca flour 1 tsp salt 4 artichokes 1 handful parsley Chili flakes 🌶 Extra virgin olive oil. For instructions on how to make the gnocchi/schupfnudeln , head over to Ela Vegan’s blog: https://elavegan.com And for the artichoke, Clean and thinly slice four artichokes. Heat up about 3 tbsp olive oil in a pan and sautee 1 garlic clove and a pinch of hot pepper flakes. Once heated, throw in the artichokes and sautée until softish and slightly browned. Mix in the cooked gnocchi and top with fresh parsley. insane lunch. 💚
