Celery Soup
This is my celery, celeriac soup and it was so freaking good.
I actually bought a ton of celery to make celery juice and I didn’t want to deal with cleaning my juicer...so I made soup instead 😅
(I’m glad I did because it was delish).
I guess that’s enough candor for today. Here’s the recipe:
Ingredients:
2 tablespoons olive oil
1 onion
2 garlic cloves
Pinch chili flakes
1 large leek
6 cups celery, roughly chopped (about 1.5 pounds) (save some leaves to fry for garnish)
1.5 cups potatoes, sliced
1 cup chopped celeriac
4-5 cups veggie broth (I made my own - or use an organic variety of bouillon)
Himalayan salt to taste
1 large handful fresh baby spinach
Instructions:
Heat the oil in a pot over medium heat, and add the onion and cook until soft. Add the garlic and pepper flakes. Stir occasionally.
While the base is cooking, rough chop the celery, leek, celeriac and potatoes. When the onions and garlic are ready, add the celery, potatoes, broth, water and salt. The liquid should cover the veggies. Cover, bring to a rboil, turn heat down and simmer gently until potatoes are tender, about 15 minutes.
Turn the heat off, add in the baby spinach. Mix for another minute and blend everything with in immersion blender.
Adjust salt to taste and serve.
I fried some of the celery leaves in olive oil and served with peppercorns and a drizzle of fresh extra virgin olive oil.
